Sunday Brunch Club - Week 54

I hope you’re all having a great weekend! This week, Nick and I traveled to New York for his brother’s wedding. It’s crazy to think that this is the baby’s second trip to NYC, and the last time we were there it was for the marathon. I always love spending time in NYC, and it was so fun to get out and enjoy a vacation. I was able to take time completely off of work, which always feels weird and sometimes hard to do, but it was a much needed reset heading into my last few months before maternity leave starts. We enjoyed some delicious meals, walks around the city, and most importantly celebrating his brother and his now wife!

Traveling is one of my favorite things, but it can also be difficult to come back from. After an exhausting day of flying and a 3 hour time difference, it can be hard to hit the ground running again come Monday (tomorrow 😅) morning. My recipes for this week are built around my return from travel, and I wanted to share a few of my personal favorite travel snacks in today’s tips section!

In Today’s newsletter:

  • What’s for dinner? I’ve planned out your week in meals and snacks so you don’t have to! Check out my menu plan for the week, and some simple recipes to go with it.

  • Weekly tip: Since I’m traveling this week, I felt like it would be helpful to share some my personal approach to fueling for a long travel day. If you have any trips coming up, this one is for you!

  • Science corner: You may have heard that training your body to be “fat adapted” can be beneficial for endurance runners, but is that really true? Today, we’re looking at what fat adaptation is and if runners should try to train their bodies to become more efficient at using fat as a fuel source.

  • Food for thought: As I watched some of the March Madness tournament last week, I couldn’t help but draw some parallels between basketball and running. I wanted to share some of my thoughts on how the tournament, much like a race, is just one glimpse behind the curtain of a long year of work.
